☆ pyaz. - 1 bada size (chopped )
☆ ghee ya refined oil - 80 gram
☆ tezpatta - 3 piece
☆ kali mirch - 15 piece
☆ kabab Chini - 10 piece
☆ badi elachi - 2 piece
☆ chooti elachi - 4 piece
☆ long - 4 piece
☆ dalchini - 1 inch ka 2 piece
☆ Shah jira - 1/3 tbsp
☆ kishmis - 25 piec
☆ namak sawad ke according
☆ water(Basmati rice ka double 1/2 kg Basmati rice hai to water 1 kg dale)
Namkeen Khichra Ko Banane Ka Tarika
Namkeen Khichra same mitha Khichra ke method se bane ga .issme suger ki jagha salt ka use kare ge .aur dry fruit ko apni pasad ke anusar dale ge .ya dry fruit na bhi dale to namkeen Khichra ke sawad me koi fark nahi pare ga.
Aaye Namkeen Khichra bana start karte hai. Sabse phele chana dal ko pani (water )se dho ker 1 ganteke liye thora pani dal ker soak hone de.
Jab chana dal soak ho jaye to cooker me chana dal ko dale 1/2 glass water dale ,1/2 tbsp namak dale , aur cooker ko band ker ke gass stove per rakhe ge.chana dal ko cooker me jiyada na galaye thora galana (pakana) hai .dal thora gale aur dal khara rahe tab namkeen Khichra ka texture aur test accha rahe ga aur dekne me accha lage ga.cooker ko tez anch per 2 city aane de phir gass ka flame ko dimi ker ke 4 minut pakaye. 4 minut tak pakaye jane per gass ka flame band ker de.
Ab Basmati rice ko dho le.aur ab gass ke flame ko caloo kare ge aur gass stove per dagchi ya kadahi rakhe. mein ne dagchi me banaye hai.aap kadahi me bhi bana sakte hai.
dagchi me refined oil ya ghee dale .mein ne refined oil dagchi me dale hai.jab oil gram ho jaye to chopped onion(paz) dale aur halka brown hone de.halka brown hone per just nikal le. phir wahi gram oil me sare gram masala, badi elachi ,chhoti elachi, long, dalchini, Shah jira, kali mirch, kabab chini, tezpatta dale aur karakne de. jab kark jaye to Basmati rice ka double pani yani 1/2 kg rice hai to water (pani ) 1 kg dale ya Basmati rice ko kisi bowl se napal le ussey bowl ka double water dale. aur pani (water )ko boil hone de gass ki flame ko tez rakhe ge .jab pani boil ho jaye to dho ker rakha houa Basmati rice dale sawad ke according namak dale aur Basmati rice ko boil hone de jab boil hone lage to boil chana dal dale gass ki flame ko tez rakhe aur ek bar sabko mila le.aur dakken band ker ke 5 minut tez anch per pakaye.
Jab Basmati rice ka pani sukhne lage to gass ke flame ko dhimi Ker de.aur namkeen Khichra ko halke hathoo dhire daire milale.aur gass ka flame dhimi rak ker rice ko ander se pakne de. 8 se 10 minut tak dhimi anch per pakaye.jab rice ander se pak jaye aur rice khila khila rahe to gass ka band ker.aur 2 minut tak dakken band rakhe.

Namkeen Khichra ko bane me chana dal ko kum pani dal ker halka galaye.dal itna gale ki aur dal khara rahe.dal puri tarah nahi galaye. Nahi to Khichra ka sawad kharab ho jaye ga.
Basmati rice ka double pani dale.1/2 rice hai to 1 kg pani dale.to rice khila khila rahe ga.kisi bowl se Basmati rice ko nap le ussey bowl ka double water dale jab jab ker namkeen Khichra khila khila aur uskuska texture accha lage ga.
